- 1 head kale, rinsed and finely chopped into strips
- 1⁄4 white cabbage, thinly sliced
- 1 handful pumpkin seeds
- 1 spring onion, chopped
- 2 sun-dried tomatoes, chopped For the dressing
- 50g almond butter
- 1 tablespoon ground nut oil
- 1 tablespoon tamari
- Juice 1 lime
- Pinch sea salt
Place the kale into a large bowl, add cabbage, pumpkin seeds, spring onions and sun-dried tomatoes.
Make the dressing: Combine all dressing in a bowl and mix until well blended.
Pour the dressing over the salad and massage thoroughly with your hands to blend flavors. Serve and enjoy.
