  • 1 head kale, rinsed and finely chopped into strips
  • 1⁄4 white cabbage, thinly sliced
  • 1 handful pumpkin seeds
  • 1 spring onion, chopped
  • 2 sun-dried tomatoes, chopped For the dressing
  • 50g almond butter
  • 1 tablespoon ground nut oil
  • 1 tablespoon tamari
  • Juice 1 lime
  • Pinch sea salt 


Place the kale into a large bowl, add cabbage, pumpkin seeds, spring onions and sun-dried tomatoes.

Make the dressing: Combine all dressing in a bowl and mix until well blended.
Pour the dressing over the salad and massage thoroughly with your hands to blend flavors. Serve and enjoy.
